Roasted Shishito Peppers
Serves: serves 4
  • 15-20 fresh shishito peppers
  • 1 tsp olive oil
  • salt and pepper
  • lemon wedge (optional)
  1. Preheat oven to 500 degrees.
  2. In a small bowl, toss together the peppers and olive oil. Season with salt and pepper and toss again. Spread over the baking sheet.
  3. Bake for 5-8 minutes, until browned and blistered. Remove from the oven and sprinkle with lemon juice (if desired).
  4. Serve.
