Mini Twice Baked Broccoli Cheddar Potatoes
Serves: serves 4
  • 4 small (about 2½ inch in diameter) potatoes
  • 1-2 tbsp milk
  • salt and pepper, to taste
  • 1 cup chopped steamed broccoli
  • ½ cup shredded cheddar cheese
  1. Wash the potatoes, and then prick once with a fork. Place on a baking sheet and bake for 45-50 minutes at 400 degrees Fahrenheit, until tender. Remove from the oven and cool.
  2. Slice the potatoes in half and scoop out the insides into a bowl. Mash with a fork. Add 1 tablespoon of milk and season with salt and pepper. Stir well. Add additional milk, if desired, to reach preferred consistency. Stir in the broccoli and half of the cheese.
  3. Divide the broccoli potato mixture evenly among the potato halves. Top with remaining cheese. Bake at 350 degrees Fahrenheit for 10-12 minutes until beginning to brown at the edges. Enjoy.
