Oh, 2014, what a year you’ve been. In July, I started my job here at the Bangor Daily News. Within a few weeks, we launched Maine Course as a column and a blog complete with art by Eric Zelz. The response from readers was amazing. Over the last six months, you’ve emailed me, commented on posts and shared my recipes. More importantly, you’ve tried them.

I can’t tell you how much joy it brings when I get a note saying how much you’ve enjoyed a recipe that appeared on Maine Course. And when I recently shared a list of my favorite dishes that I’ve eaten in Maine this year, I was so excited to see so many of you respond with your favorites. I have a list in my desk of the places you’ve recommended, and plan to try as many as I can in 2015.

As we close out 2014, I wanted to leave you with one final recipe perfect for New Year’s Eve bashes. My family has a long-standing tradition of watching a movie, digging into appetizers and then watching the ball drop in New York (on TV, of course). The appetizers are always rich and savory — saucy wings, nachos, fried mozzarella.

This recipe is born from the idea that you should usher out the year decadently.

Creamy brie is transformed into something ethereal in this recipe for Maple Bacon Baked Brie. Topped with a mountain of crumbled bacon and maple syrup and enrobed in flaky puff pastry, it’s an appetizer that will make guests ooh and ahh. I love serving this baked brie with sliced apples, but it’s equally delicious with crackers or even warm slices of crusty bread. But your guests might just forego all that and slice bits off — enjoying the creamy baked cheese with the pastry.

Maple Bacon Baked Brie Appetizer Recipe

Maple Bacon Baked Brie

Ingredients
  • 1 sheet frozen puff pastry, thawed
  • 1 8-ounce wheel of Brie cheese
  • 5 slices bacon, cooked and crumbled
  • ¼ cup maple syrup
  • 1 egg, beaten
Instructions
  1. Preheat oven to 375 degrees.
  2. Line a baking sheet with either parchment paper or nonstick aluminum foil. Lay the puff pastry on it, and place the brie wheel in the center. Spread the bacon on top of the brie and drizzle with maple syrup.
  3. Bring the four corners of the puff pastry together and press to seal. Seal the remaining edges and gently pat around the brie.
  4. Brush all over with the beaten egg. Discard any leftover egg.
  5. Bake for 18-20 minutes, until golden. Serve immediately
  6. If desired, serve with apple slices and/or crackers.
