A few weeks ago, I spotted a selection of apples at a stand at the Bangor Farmers Market. They weren’t the prettiest apples I’ve seen, but I could see past the spotted, pockmarked exteriors and know that they would make delicious dishes.

I paused and asked the farmer which ones she’d recommend for baking, and then filled my bag with her suggestions.

Those apples worked perfectly in an Apple Crumble I made for my BDN column Maine Course. But our discussion got me thinking about all the ways in which apples can be used in fall.
